Our very own Sally Fitzgibbons has the perfect recipe to beat the summer heat wave we are enjoying!
Try this delicious looking watermelon pizza from her new book, Summer Fit all year round. Its quick and easy to make.
To serve 8, you will need;
- 1 whole watermelon
- 1 cup of coconut yoghurt
- 1 x 250g punnet of raspberries or strawberries
- 1 x 250g punnet of blueberries
- 4 sprigs mint leave
- 1 passionfruit
Cut a 2.5 cm thick slice out of the watermelon and lay it flat, then cut the slice into 6 pizza wedges.
Spread the yoghurt from the tip of each piece almost to the edges, leaving a few cm of pink showing.
Scatter the berries and mint leaves over the top, and drizzle with passion fruit.
